- 250g de mascarpone
- 30g de cacao en poudre
- 200g de biscuit à la cuillère
- 100ml de sirop de cerise
- 200g de cerises fraîches
- 300ml de crème fouettée
- 80g de sucre en poudre
- 2g d’agar-agar
Instructions
- In a large bowl, mix the mascarpone with the powdered sugar using an electric whisk until smooth and homogeneous.
- Gently fold in the whipped cream with a spatula, being careful not to deflate the mixture.
- Chill the creamy mixture in the fridge.
- Quickly dip each ladyfinger in the cherry syrup for about 2 seconds.
- Layer the soaked ladyfingers in a rectangular dish or glasses.
- Spread a portion of the creamy mixture over the first layer of ladyfingers.
- Add some fresh cherries on top.
- Repeat with a second layer of ladyfingers and more cream.
- Spread the remaining creamy mixture on top of the tiramisu.
- Sift cocoa powder generously on top before chilling.
- Let the Tiramisu Forêt-Noire rest in the refrigerator for at least 240 minutes before serving.
Notes
Make sure not to soak the ladyfingers for too long to avoid mushiness. Fresh cherries provide a better taste than canned ones.
