- 1 pre-made pie crust
- 400g butternut squash, peeled and diced
- 2 apples, peeled and chopped
- 100g sugar
- 2 large eggs
- 200ml crème fraîche
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat your oven to 180°C (350°F).
- Roll out the pie crust into a tart pan, covering the edges well.
- Cook the diced squash in a pot over medium heat until tender.
- Mash the cooked squash and mix in the chopped apples.
- Add sugar, eggs, crème fraîche, spices, salt, and pepper to the squash and apple mixture; blend until smooth.
- Pour the mixture into the pie crust, spreading it evenly.
- Bake in the preheated oven for 40 to 45 minutes until golden.
- Let cool slightly before slicing and serve warm or at room temperature.
Notes
Best served with whipped cream or vanilla ice cream. Can be refrigerated for 3-4 days or frozen for up to 2 months.
