Description

A delightful balance of sweet squash and apple, spiced to perfection, capturing the essence of autumn.


Ingredients

  • 1 pre-made pie crust
  • 400g butternut squash, peeled and diced
  • 2 apples, peeled and chopped
  • 100g sugar
  • 2 large eggs
  • 200ml crème fraîche
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Roll out the pie crust into a tart pan, covering the edges well.
  3. Cook the diced squash in a pot over medium heat until tender.
  4. Mash the cooked squash and mix in the chopped apples.
  5. Add sugar, eggs, crème fraîche, spices, salt, and pepper to the squash and apple mixture; blend until smooth.
  6. Pour the mixture into the pie crust, spreading it evenly.
  7. Bake in the preheated oven for 40 to 45 minutes until golden.
  8. Let cool slightly before slicing and serve warm or at room temperature.

Notes

Best served with whipped cream or vanilla ice cream. Can be refrigerated for 3-4 days or frozen for up to 2 months.
