A flavorful and nutritious vegetable tajine that’s perfect for sharing with family and friends.
Ingredients

- 300g de carottes
- 200g de courgettes
- 250g d’aubergines
- 1 gros oignon
- 150g de poivrons rouges
- 1 cuillère à café de cumin
- 1 cuillère à café de curcuma
- 1 cuillère à café de paprika
- 500ml de bouillon de légumes
- Une poignée de coriandre fraîche
- 2 cuillères à soupe d’huile d’olive
Instructions
- Wash all the vegetables thoroughly under running water.
- Peel the carrots and cut them into 1 cm thick rounds.
- Dice the courgettes and aubergines into 2 cm pieces.
- Finely chop the onion.
- Heat 2 tablespoons of olive oil in a large pot or tajine over medium heat.
- Add the chopped onion and sauté for about 5 minutes until translucent.
- Stir in the cumin, turmeric, and paprika, and sauté for about 1 minute.
- Add all the prepared vegetables to the pot and mix for 2-3 minutes.
- Pour in the hot vegetable broth until vegetables are nearly covered.
- Bring to a boil, then reduce heat to low and cover. Let it simmer for 30 minutes.
- Once vegetables are tender, remove from heat and garnish with chopped fresh coriander before serving.
- Serve hot, allowing everyone to enjoy the medley of flavors.
Notes
For maximum taste, add a squeeze of fresh lemon juice just before serving and avoid overcooking the vegetables to keep them slightly crunchy.
