Description

A flavorful and nutritious vegetable tajine that’s perfect for sharing with family and friends.


Ingredients

Scale
  • 300g de carottes
  • 200g de courgettes
  • 250g d’aubergines
  • 1 gros oignon
  • 150g de poivrons rouges
  • 1 cuillère à café de cumin
  • 1 cuillère à café de curcuma
  • 1 cuillère à café de paprika
  • 500ml de bouillon de légumes
  • Une poignée de coriandre fraîche
  • 2 cuillères à soupe d’huile d’olive

Instructions

  1. Wash all the vegetables thoroughly under running water.
  2. Peel the carrots and cut them into 1 cm thick rounds.
  3. Dice the courgettes and aubergines into 2 cm pieces.
  4. Finely chop the onion.
  5. Heat 2 tablespoons of olive oil in a large pot or tajine over medium heat.
  6. Add the chopped onion and sauté for about 5 minutes until translucent.
  7. Stir in the cumin, turmeric, and paprika, and sauté for about 1 minute.
  8. Add all the prepared vegetables to the pot and mix for 2-3 minutes.
  9. Pour in the hot vegetable broth until vegetables are nearly covered.
  10. Bring to a boil, then reduce heat to low and cover. Let it simmer for 30 minutes.
  11. Once vegetables are tender, remove from heat and garnish with chopped fresh coriander before serving.
  12. Serve hot, allowing everyone to enjoy the medley of flavors.

Notes

For maximum taste, add a squeeze of fresh lemon juice just before serving and avoid overcooking the vegetables to keep them slightly crunchy.
