Ingredients
Scale
- 3 medium betteraves crues, diced
- 2 cups tomates rôties
- 100g feta, crumbled
- 4 cups bouillon de légumes
- 1 oignon, chopped
- 2 cloves d’ail, minced
- 2 tablespoons huile d’olive
- Sel et poivre, to taste
Instructions
- In a pot, heat the huile d’olive and sauté the oignon and d’ail until golden.
- Add the diced betteraves crues and tomates rôties, mixing well.
- Pour in the bouillon de légumes and bring to a boil.
- Reduce heat and simmer for 30 minutes.
- Blend the soup until smooth.
- Serve hot, garnished with crumbled feta.
Notes
For added flavor, consider using homemade vegetable broth. You can also experiment with spices like cumin or turmeric for an exotic twist.
