Description
Delicious and easy-to-make spinach and feta rolls, perfect as finger food for any occasion.
Ingredients

- 300g fresh spinach
- 200g feta cheese
- 3 eggs
- 150g grated cheese (mozzarella recommended)
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1 sheet puff pastry
Instructions
- Preheat your oven to 200°C (390°F).
- Prepare a baking sheet with parchment paper.
- In a large skillet, heat olive oil over medium heat.
- Add fresh spinach and sauté for about 3-4 minutes until wilted.
- Season with salt and pepper to taste.
- Allow to cool slightly.
- In a bowl, mix together the cooked spinach, crumbled feta, beaten eggs, and grated cheese until well combined.
- Roll out the puff pastry on a floured surface.
- Cut the pastry into rectangles approximately 10×15 cm.
- Place a generous spoonful of the spinach mixture in the center of each rectangle.
- Roll up each rectangle tightly, starting from the filled edge.
- Place them seam side down on the prepared baking sheet.
- Bake for 20-25 minutes or until golden and crispy.
- Remove from oven and let cool slightly before serving.
Notes
They can be prepared in advance and stored in the fridge before baking. Use frozen spinach if fresh isn’t available.
