A comforting and delicious crustless quiche combining sweet pumpkin flavors with creamy goat cheese, perfect for any meal.

- 1 small potimarron, diced
- 1 onion, finely chopped
- 3 eggs
- 200ml crème fraîche
- 100g all-purpose flour
- 150g goat cheese, cubed
- 1 tbsp olive oil
- Salt to taste
- Pepper to taste
- 1 tsp dried thyme
- A pinch of nutmeg
Instructions
- In a skillet, heat olive oil over medium heat. Sauté the onion until translucent, about 3 minutes.
- Add the diced potimarron, thyme, salt, and pepper; cook for 10 to 15 minutes until tender.
- Let the mixture cool slightly.
- Preheat the oven to 180°C (350°F).
- In a large bowl, whisk the eggs with crème fraîche. Gradually mix in the flour to avoid lumps.
- Add the grated cheese, salt, pepper, and nutmeg; mix well.
- Gently fold in the cooled potimarron mixture and cubed goat cheese.
- Pour the mixture into a greased 22-24 cm (9-10 inch) quiche dish.
- Bake for 35 to 45 minutes until golden and firm to the touch.
- Let cool slightly before slicing and serving.
Notes
Can be served warm or cold, paired with a green salad. For storage, refrigerate for 3-4 days or freeze up to 2 months.
