Description

A comforting and delicious crustless quiche combining sweet pumpkin flavors with creamy goat cheese, perfect for any meal.


Ingredients

  • 1 small potimarron, diced
  • 1 onion, finely chopped
  • 3 eggs
  • 200ml crème fraîche
  • 100g all-purpose flour
  • 150g goat cheese, cubed
  • 1 tbsp olive oil
  • Salt to taste
  • Pepper to taste
  • 1 tsp dried thyme
  • A pinch of nutmeg

Instructions

  1. In a skillet, heat olive oil over medium heat. Sauté the onion until translucent, about 3 minutes.
  2. Add the diced potimarron, thyme, salt, and pepper; cook for 10 to 15 minutes until tender.
  3. Let the mixture cool slightly.
  4. Preheat the oven to 180°C (350°F).
  5. In a large bowl, whisk the eggs with crème fraîche. Gradually mix in the flour to avoid lumps.
  6. Add the grated cheese, salt, pepper, and nutmeg; mix well.
  7. Gently fold in the cooled potimarron mixture and cubed goat cheese.
  8. Pour the mixture into a greased 22-24 cm (9-10 inch) quiche dish.
  9. Bake for 35 to 45 minutes until golden and firm to the touch.
  10. Let cool slightly before slicing and serving.

Notes

Can be served warm or cold, paired with a green salad. For storage, refrigerate for 3-4 days or freeze up to 2 months.
