Ingredients

  • 500 ml chicken broth
  • 1 tablespoon flour
  • 1 sprig fresh thyme
  • Salt to taste
  • Black pepper to taste
  • Fresh parsley, chopped

Instructions

  1. Sauté the onion in a pot over medium heat until golden and translucent, about 4 to 5 minutes.
  2. Add the bacon and cook together for about 5 minutes, until crispy.
  3. Sprinkle flour over the mixture and stir for 1 to 2 minutes to coat.
  4. Gradually add the hot broth, stirring to avoid lumps.
  5. Incorporate the diced potatoes, thyme sprig, and half the chopped parsley. Season with salt and pepper.
  6. Cover the pot and simmer for 25 to 30 minutes, until the potatoes are tender.
  7. Check the seasoning and adjust as needed before serving hot, garnished with remaining parsley.
