- 2 slices smoked bacon, diced
- 1 onion, roughly chopped
- 500 ml chicken broth
- 1 tablespoon flour
- 1 sprig fresh thyme
- Salt to taste
- Black pepper to taste
- Fresh parsley, chopped
Instructions
- Sauté the onion in a pot over medium heat until golden and translucent, about 4 to 5 minutes.
- Add the bacon and cook together for about 5 minutes, until crispy.
- Sprinkle flour over the mixture and stir for 1 to 2 minutes to coat.
- Gradually add the hot broth, stirring to avoid lumps.
- Incorporate the diced potatoes, thyme sprig, and half the chopped parsley. Season with salt and pepper.
- Cover the pot and simmer for 25 to 30 minutes, until the potatoes are tender.
- Check the seasoning and adjust as needed before serving hot, garnished with remaining parsley.
Notes
Serve with fresh bread or green vegetables for a hearty meal. For extra richness, add a drizzle of cream before serving.
