Description

A delightful dessert that combines the fruity sweetness of apples with the rich creaminess of mascarpone, perfect for family gatherings or a cozy afternoon treat.


Ingredients

  • 23 apples, peeled and diced
  • 50g butter
  • 50g sugar (for caramelizing apples)
  • 1 tsp cinnamon
  • 3 eggs
  • 150g powdered sugar
  • 250g mascarpone cheese, chilled
  • 200g all-purpose flour
  • 1 packet baking powder
  • Extra brown sugar for topping

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. In a pan, melt the butter and add the diced apples. Sprinkle with sugar and cinnamon; sauté until slightly golden. Set aside.
  3. In a large bowl, beat the eggs with powdered sugar until fluffy. Incorporate the cold mascarpone and mix well.
  4. Gradually add the sifted flour and baking powder, stirring until smooth. Gently fold in the caramelized apples.
  5. Grease and flour a cake pan to prevent sticking.
  6. Pour the batter into the prepared pan and smooth the top.
  7. Slice the remaining apples and arrange them decoratively on top of the batter, optionally sprinkling with brown sugar.
  8. Bake for 30-45 minutes, checking doneness with a knife.
  9. Once baked, let the cake cool before removing from the pan. Dust with powdered sugar before serving if desired.

Notes

For the best flavor, use sweet and juicy apples like Golden or Fuji. Store leftovers in the refrigerator for 3-4 days.
