- 4 chicken breasts
- 100g grated Parmesan cheese
- 50g breadcrumbs
- 2 eggs
- 2 tablespoons flour
- Salt and pepper (to taste)
- Paprika (to taste)
- 2 tablespoons olive oil
- 200ml heavy cream
- 50g butter
- 2 garlic cloves, minced
- 80g grated Parmesan cheese (for the sauce)
- Salt and pepper (to taste)
- Nutmeg (optional)
Instructions
- Preheat your oven to 200°C (400°F).
- In a bowl, mix together 100g grated Parmesan cheese, breadcrumbs, flour, salt, pepper, and paprika.
- In another bowl, beat the eggs.
- Dip each chicken breast into the beaten eggs, then coat with the breadcrumb mixture until well covered.
- Heat the olive oil in a pan and brown the chicken breasts on both sides.
- Place the browned chicken breasts on a baking sheet and bake for 15-20 minutes, or until cooked through.
- For the Alfredo sauce, melt the butter in a saucepan over medium heat. Add the minced garlic and sauté until fragrant.
- Pour in the heavy cream and stir in 80g of grated Parmesan cheese. Season with salt, pepper, and a pinch of nutmeg if desired.
- Serve the crispy chicken breasts with a generous drizzle of the Alfredo sauce.
Notes
For extra crunch, add crushed cornflakes to the breadcrumb mixture. Use freshly grated Parmesan for better flavor. Add red pepper flakes for a spicier kick.
