Description

A simple and delicious twist on the classic Œufs Mimosa, made effortlessly in an air fryer.


Ingredients

  • 6 large eggs, at room temperature
  • 2 tablespoons homemade mayonnaise (or store-bought)
  • 1 pinch fresh tarragon
  • Salt and freshly ground pepper to taste
  • Parsley for garnish

Instructions

  1. Remove the eggs from the refrigerator 30 minutes before cooking.
  2. Preheat the air fryer to 130°C for 3 minutes.
  3. Carefully place the eggs in the basket.
  4. Cook for 15 minutes.
  5. Prepare a bowl of ice water.
  6. Immediately plunge the eggs into the ice water to stop the cooking process.
  7. Peel the eggs, cut them in half, and remove the yolks. Mash the yolks and mix with mayonnaise, tarragon, salt, and pepper.
  8. Fill the egg whites with the mixture.
  9. Garnish with parsley and serve.

Notes

For a healthier option, substitute mayonnaise with Greek yogurt. You can add jalapeños or smoked paprika for an extra kick.
