Description
A simple and delicious twist on the classic Œufs Mimosa, made effortlessly in an air fryer.
Ingredients

- 6 large eggs, at room temperature
- 2 tablespoons homemade mayonnaise (or store-bought)
- 1 pinch fresh tarragon
- Salt and freshly ground pepper to taste
- Parsley for garnish
Instructions
- Remove the eggs from the refrigerator 30 minutes before cooking.
- Preheat the air fryer to 130°C for 3 minutes.
- Carefully place the eggs in the basket.
- Cook for 15 minutes.
- Prepare a bowl of ice water.
- Immediately plunge the eggs into the ice water to stop the cooking process.
- Peel the eggs, cut them in half, and remove the yolks. Mash the yolks and mix with mayonnaise, tarragon, salt, and pepper.
- Fill the egg whites with the mixture.
- Garnish with parsley and serve.
Notes
For a healthier option, substitute mayonnaise with Greek yogurt. You can add jalapeños or smoked paprika for an extra kick.
