Description

Mujadara is a traditional Lebanese dish combining lentils, rice, and caramelized onions, making it a healthy and flavorful vegetarian meal.


Ingredients

Scale
  • 5 medium onions (500g), sliced
  • 300g green or brown lentils
  • 180g brown or white rice
  • 1.25 to 1.5 liters water
  • 1 tablespoon vegetable broth powder
  • 1½ teaspoons salt
  • 1 teaspoon ground cumin
  • 2 bay leaves
  • Black pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. If using brown rice, soak it for 20 minutes and drain.
  2. In a pot, cook the rice with 625 ml of water, broth powder, 1 teaspoon of salt, pepper, and bay leaves for 20 minutes.
  3. Soak the lentils and drain. Add them to the rice with 750 ml of water and cook for 25 minutes.
  4. In a skillet, heat the olive oil and add the onions. Cook covered for 10 minutes.
  5. Uncover and add cumin and ½ teaspoon of salt. Cook for another 5 to 10 minutes until golden.
  6. Remove bay leaves. Stir 2/3 of the caramelized onions into the rice and lentil mixture.
  7. Top with the remaining caramelized onions. Serve with vegan yogurt and fresh herbs.

Notes

Adjust the amount of cumin to your taste. For a richer flavor, caramelize the onions longer. Serve with lemon slices for acidity.
