Description
Mujadara is a traditional Lebanese dish combining lentils, rice, and caramelized onions, making it a healthy and flavorful vegetarian meal.
Ingredients

- 5 medium onions (500g), sliced
- 300g green or brown lentils
- 180g brown or white rice
- 1.25 to 1.5 liters water
- 1 tablespoon vegetable broth powder
- 1½ teaspoons salt
- 1 teaspoon ground cumin
- 2 bay leaves
- Black pepper to taste
- 2 tablespoons olive oil
Instructions
- If using brown rice, soak it for 20 minutes and drain.
- In a pot, cook the rice with 625 ml of water, broth powder, 1 teaspoon of salt, pepper, and bay leaves for 20 minutes.
- Soak the lentils and drain. Add them to the rice with 750 ml of water and cook for 25 minutes.
- In a skillet, heat the olive oil and add the onions. Cook covered for 10 minutes.
- Uncover and add cumin and ½ teaspoon of salt. Cook for another 5 to 10 minutes until golden.
- Remove bay leaves. Stir 2/3 of the caramelized onions into the rice and lentil mixture.
- Top with the remaining caramelized onions. Serve with vegan yogurt and fresh herbs.
Notes
Adjust the amount of cumin to your taste. For a richer flavor, caramelize the onions longer. Serve with lemon slices for acidity.
