Description
A traditional Lebanese dish combining lentils, rice, and caramelized onions, Mujadara is a simple, nourishing, and comforting meal.
Ingredients

- 5 medium onions (500g), sliced
- 300g green or brown lentils
- 180g brown or white rice
- 1.25 to 1.5 liters of water
- 1 tablespoon vegetable bouillon powder
- 1½ teaspoons salt
- 1 teaspoon ground cumin
- 2 bay leaves
- Black pepper to taste
- 2 tablespoons olive oil
Instructions
- If using brown rice, soak it for 20 minutes and drain.
- Cook the rice with 625 ml of water, bouillon, 1 teaspoon of salt, pepper, and bay leaves. Cook for 20 minutes.
- Soak and drain the lentils. Add them to the rice with 750 ml of water. Cook for 25 minutes.
- Heat the oil in a pan. Add the sliced onions and cook for 10 minutes covered.
- Uncover, add the cumin, and ½ teaspoon of salt. Cook for an additional 5 to 10 minutes until golden.
- Remove bay leaves. Stir in 2/3 of the caramelized onions into the rice and lentil mixture. Top with the remaining onions.
- Serve with plant-based yogurt and fresh herbs.
Notes
Ensure to caramelize the onions for a rich flavor. Adjust salt and spices to taste. For extra zest, add a bit of lemon when serving.
