- 4 chicken thighs
- 2 lemons (juice and zest)
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon cumin
- 1 teaspoon oregano
- Salt and pepper to taste
Instructions
- In a bowl, mix lemon juice, lemon zest, olive oil, garlic, paprika, cumin, oregano, salt, and pepper.
- Add the chicken thighs to the marinade and coat well.
- Cover and allow to marinate in the refrigerator for at least 1 hour, preferably overnight.
- Preheat the oven to 400°F (200°C).
- Place the chicken thighs on a baking sheet and roast for 35-40 minutes, or until cooked through and golden.
- Let rest for a few minutes before serving.
Notes
For best flavor, marinate the chicken overnight. Can substitute chicken breasts or tofu as alternatives.
