Description

Easy and flavorful marinated chicken thighs with lemon and Mediterranean spices, perfect for a quick weeknight dinner.


Ingredients

  • 4 chicken thighs
  • 2 lemons (juice and zest)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix lemon juice, lemon zest, olive oil, garlic, paprika, cumin, oregano, salt, and pepper.
  2. Add the chicken thighs to the marinade and coat well.
  3. Cover and allow to marinate in the refrigerator for at least 1 hour, preferably overnight.
  4. Preheat the oven to 400°F (200°C).
  5. Place the chicken thighs on a baking sheet and roast for 35-40 minutes, or until cooked through and golden.
  6. Let rest for a few minutes before serving.

Notes

For best flavor, marinate the chicken overnight. Can substitute chicken breasts or tofu as alternatives.
