- 1 onion, finely chopped
- 2 carrots, sliced
- 2 potatoes, chopped into chunks
- ½ pumpkin, cut into large cubes
- 800 g canned peeled tomatoes, crushed
- 200 g peanut butter
- Salt, to taste
- Pepper, to taste
- Chili (optional)
- Oil, for sautéing
Instructions
- Prepare the vegetables: chop the onion, slice the carrots, cube the potatoes, and cut the pumpkin into chunks.
- In a large pot, heat oil over medium-low heat. Sauté the onion until translucent and lightly golden.
- Add the carrots, potatoes, and pumpkin, and sauté on high heat for a few minutes.
- Add water to cover the vegetables, then add the crushed tomatoes. Let it simmer on medium heat for about 50 minutes.
- Season with salt and stir in the peanut butter, mixing well. Add chili if desired.
- Serve with fragrant rice, garnished with extra peanut butter and crushed peanuts for a crunchy finish.
Notes
Store in an airtight container in the refrigerator for 3-4 days, or freeze for up to 2 months. Reheat gently before serving.
