Description

A comforting dish blending West African flavors with the autumn sweetness of pumpkin, featuring a creamy peanut sauce and colorful vegetables.


Ingredients

  • 1 onion, finely chopped
  • 2 carrots, sliced
  • 2 potatoes, chopped into chunks
  • ½ pumpkin, cut into large cubes
  • 800 g canned peeled tomatoes, crushed
  • 200 g peanut butter
  • Salt, to taste
  • Pepper, to taste
  • Chili (optional)
  • Oil, for sautéing

Instructions

  1. Prepare the vegetables: chop the onion, slice the carrots, cube the potatoes, and cut the pumpkin into chunks.
  2. In a large pot, heat oil over medium-low heat. Sauté the onion until translucent and lightly golden.
  3. Add the carrots, potatoes, and pumpkin, and sauté on high heat for a few minutes.
  4. Add water to cover the vegetables, then add the crushed tomatoes. Let it simmer on medium heat for about 50 minutes.
  5. Season with salt and stir in the peanut butter, mixing well. Add chili if desired.
  6. Serve with fragrant rice, garnished with extra peanut butter and crushed peanuts for a crunchy finish.

Notes

Store in an airtight container in the refrigerator for 3-4 days, or freeze for up to 2 months. Reheat gently before serving.
