- 2 chicken breasts

- 1 tomato, diced
- 1 cucumber, diced

Instructions
- Cook the rice according to package instructions.
- In a skillet, heat olive oil over medium heat. Add chicken, season with salt and pepper, and cook until golden brown and fully cooked.
- Meanwhile, dice the tomato and cucumber.
- In a bowl, mix the diced tomato and cucumber with olive oil, salt, pepper, and lemon juice if desired.
- Serve the chicken over a bed of rice with the salad on the side.
