Ingredients

Instructions

  1. Cook the rice according to package instructions.
  2. In a skillet, heat olive oil over medium heat. Add chicken, season with salt and pepper, and cook until golden brown and fully cooked.
  3. Meanwhile, dice the tomato and cucumber.
  4. In a bowl, mix the diced tomato and cucumber with olive oil, salt, pepper, and lemon juice if desired.
  5. Serve the chicken over a bed of rice with the salad on the side.
