Description

A comforting autumn gratin made with pumpkin, cream, and cheese, perfect for family gatherings.


Ingredients

Scale
  • 1.5 kg potimarron
  • 200 ml crème fraîche
  • 100 g cheese (gruyère or emmental)
  • 2 cloves garlic
  • 1 onion
  • 2 tablespoons olive oil
  • Salt, to taste
  • Pepper, to taste
  • Ground nutmeg, to taste
  • Herbs de Provence (optional)

Instructions

  1. Preheat your oven to 180°C (356°F).
  2. Wash the potimarron and cut it in half. Remove the seeds and peel if desired (the skin is edible!).
  3. Cut the potimarron into 2-3 cm cubes.
  4. Peel and finely chop the onion and garlic cloves.
  5. In a large skillet, heat the olive oil over medium heat. Add the onions and sauté until translucent.
  6. Add the garlic and sauté for 1 minute until fragrant.
  7. Add the potimarron cubes to the skillet. Stir and sauté for about 5 minutes.
  8. In a bowl, mix the crème fraîche with salt, pepper, and nutmeg.
  9. Place the potimarron mixture into a greased baking dish.
  10. Pour the seasoned cream over the potimarron.
  11. Sprinkle the grated cheese on top.
  12. Bake for 30 to 40 minutes until the top is golden and the potimarron is tender when pierced with a knife.
  13. Allow to rest for a few minutes before serving for better texture.

Notes

For a twist, add pecans or hazelnuts before baking, or incorporate fresh spinach or carrots for more color and nutrients.
