Description
A comforting autumn gratin made with pumpkin, cream, and cheese, perfect for family gatherings.
Ingredients

- 1.5 kg potimarron
- 200 ml crème fraîche
- 100 g cheese (gruyère or emmental)
- 2 cloves garlic
- 1 onion
- 2 tablespoons olive oil
- Salt, to taste
- Pepper, to taste
- Ground nutmeg, to taste
- Herbs de Provence (optional)
Instructions
- Preheat your oven to 180°C (356°F).
- Wash the potimarron and cut it in half. Remove the seeds and peel if desired (the skin is edible!).
- Cut the potimarron into 2-3 cm cubes.
- Peel and finely chop the onion and garlic cloves.
- In a large skillet, heat the olive oil over medium heat. Add the onions and sauté until translucent.
- Add the garlic and sauté for 1 minute until fragrant.
- Add the potimarron cubes to the skillet. Stir and sauté for about 5 minutes.
- In a bowl, mix the crème fraîche with salt, pepper, and nutmeg.
- Place the potimarron mixture into a greased baking dish.
- Pour the seasoned cream over the potimarron.
- Sprinkle the grated cheese on top.
- Bake for 30 to 40 minutes until the top is golden and the potimarron is tender when pierced with a knife.
- Allow to rest for a few minutes before serving for better texture.
Notes
For a twist, add pecans or hazelnuts before baking, or incorporate fresh spinach or carrots for more color and nutrients.
