- 250 g mascarpone
- 250 ml crème fraîche
- 50 g sugar

Instructions
- Crush the speculoos and mix with melted butter to form a base.
- Press the mixture into the bottom of a log mold.
- Whip the crème fraîche with sugar and vanilla extract until firm peaks form.
- Gently fold the mascarpone into the whipped cream.
- Pour the mousse over the speculoos base and smooth the top.
- Refrigerate for at least 4 hours or overnight to set.
- Unmold and decorate with grated chocolate or fruit before serving.
