Description

A delicious recipe for gratinated asparagus that highlights the season’s fresh asparagus, featuring a creamy béchamel sauce and melted cheese.


Ingredients

  • 1 bunch of white or green asparagus
  • 80 g of ham (or vegetarian substitute)
  • 50 g of butter
  • 50 g of flour
  • 500 ml of milk
  • 120 g of grated cheese (Gruyère, Emmental, Parmesan)
  • Salt, pepper, nutmeg

Instructions

  1. Prepare the asparagus: Peel the white asparagus, if using (not needed for green ones). Cut off the tough ends. Cook in boiling salted water for 8 to 10 minutes.
  2. Prepare the béchamel sauce: Melt the butter in a saucepan, add flour to form a roux. Gradually pour in milk while whisking. Add grated cheese, salt, pepper, and nutmeg.
  3. Assemble the dish: Place the cooked asparagus in a buttered dish. Add rolled ham slices around or under the asparagus. Cover with béchamel sauce and sprinkle with remaining cheese.
  4. Bake in the oven: Bake at 200°C (392°F) for 15 to 20 minutes. Finish under the grill for 3 minutes for a golden crust.

Notes

For a keto version, use heavy cream and cheese without flour or milk. An optional crunchy topping can be achieved by adding breadcrumb before baking.
