A delicious recipe for gratinated asparagus that highlights the season’s fresh asparagus, featuring a creamy béchamel sauce and melted cheese.

- 1 bunch of white or green asparagus
- 80 g of ham (or vegetarian substitute)
- 50 g of butter
- 50 g of flour
- 500 ml of milk
- 120 g of grated cheese (Gruyère, Emmental, Parmesan)
- Salt, pepper, nutmeg
Instructions
- Prepare the asparagus: Peel the white asparagus, if using (not needed for green ones). Cut off the tough ends. Cook in boiling salted water for 8 to 10 minutes.
- Prepare the béchamel sauce: Melt the butter in a saucepan, add flour to form a roux. Gradually pour in milk while whisking. Add grated cheese, salt, pepper, and nutmeg.
- Assemble the dish: Place the cooked asparagus in a buttered dish. Add rolled ham slices around or under the asparagus. Cover with béchamel sauce and sprinkle with remaining cheese.
- Bake in the oven: Bake at 200°C (392°F) for 15 to 20 minutes. Finish under the grill for 3 minutes for a golden crust.
Notes
For a keto version, use heavy cream and cheese without flour or milk. An optional crunchy topping can be achieved by adding breadcrumb before baking.
