Healthy, crunchy, and delicious energy biscuits packed with nutrients, perfect for a quick snack or breakfast boost.


Ingredients

Scale
  • 200 g rolled oats
  • 100 g chopped nuts (almonds or hazelnuts)
  • 50 g sunflower seeds
  • 50 g chia seeds
  • 1 pinch of salt
  • 120 g honey or maple syrup
  • 80 g melted coconut oil
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 180°C (356°F).
  2. Line a baking sheet with parchment paper.
  3. In a large bowl, mix the rolled oats, chopped nuts, sunflower seeds, chia seeds, and salt.
  4. In another bowl, combine honey or maple syrup, melted coconut oil, and vanilla extract.
  5. Pour the liquid mixture over the dry ingredients and mix until well combined.
  6. With slightly damp hands, form balls using about 30 g of the mixture and place them on the prepared baking sheet, flattening them slightly.
  7. Bake for about 15-20 minutes or until the edges are golden. Let them cool on a rack before enjoying.

Notes

Store in an airtight container in the refrigerator for up to 4 days or freeze for up to 2 months. They can also be kept at room temperature for up to a week.
