A delightful Mediterranean sweet fougasse infused with orange blossom water and rum, perfect for any occasion.
Ingredients

- 500 g flour
- 10 g salt
- 75 g sugar
- 10 g active dry yeast
- 300 ml warm water
- 60 ml olive oil
- 3 tablespoons orange blossom water
- 2 tablespoons rum (optional)
- Extra sugar for decoration (optional)
Instructions
- Mix the dry ingredients: In a large bowl, combine 500 g of flour, 10 g of salt, and 75 g of sugar.
- Activate the yeast: In a separate bowl, crumble 10 g of yeast into 300 ml of warm water and let it rest for about 5 minutes until bubbles appear.
- Incorporate liquids: Add the yeast mixture to the flour mixture along with 60 ml of olive oil, 3 tablespoons of orange blossom water, and 2 tablespoons of rum if using.
- Knead the dough: Knead the dough for about 10 minutes until smooth and elastic.
- First fermentation: Shape the dough into a ball, place it in a lightly oiled bowl, cover with a clean cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
- Preheat the oven: Heat your oven to 180°C (350°F).
- Shape the dough: Once risen, punch down the dough and shape it into an oval or rectangular form on a floured surface.
- Prepare the baking sheet: Place the fougasse on a parchment-lined baking sheet and sprinkle sugar on top if desired.
- Decorate: Make diagonal cuts on the surface for decoration and steam escape.
- Bake: Bake for about 25 to 30 minutes until golden brown. It should sound hollow when tapped on the bottom.
- Cool before serving: Allow to cool on a wire rack before serving.

Store in an airtight container at room temperature for 2-3 days, in the fridge for up to 5 days, or freeze for up to 2 months.
