Description

A delightful Mediterranean sweet fougasse infused with orange blossom water and rum, perfect for any occasion.


Ingredients

  • 500 g flour
  • 10 g salt
  • 75 g sugar
  • 10 g active dry yeast
  • 300 ml warm water
  • 60 ml olive oil
  • 3 tablespoons orange blossom water
  • 2 tablespoons rum (optional)
  • Extra sugar for decoration (optional)

Instructions

  1. Mix the dry ingredients: In a large bowl, combine 500 g of flour, 10 g of salt, and 75 g of sugar.
  2. Activate the yeast: In a separate bowl, crumble 10 g of yeast into 300 ml of warm water and let it rest for about 5 minutes until bubbles appear.
  3. Incorporate liquids: Add the yeast mixture to the flour mixture along with 60 ml of olive oil, 3 tablespoons of orange blossom water, and 2 tablespoons of rum if using.
  4. Knead the dough: Knead the dough for about 10 minutes until smooth and elastic.
  5. First fermentation: Shape the dough into a ball, place it in a lightly oiled bowl, cover with a clean cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
  6. Preheat the oven: Heat your oven to 180°C (350°F).
  7. Shape the dough: Once risen, punch down the dough and shape it into an oval or rectangular form on a floured surface.
  8. Prepare the baking sheet: Place the fougasse on a parchment-lined baking sheet and sprinkle sugar on top if desired.
  9. Decorate: Make diagonal cuts on the surface for decoration and steam escape.
  10. Bake: Bake for about 25 to 30 minutes until golden brown. It should sound hollow when tapped on the bottom.
  11. Cool before serving: Allow to cool on a wire rack before serving.
