- 1 liter vegetable broth

Instructions
- Wash and chop the leeks, celery, and potatoes into chunks.
- In a large pot, heat some olive oil, add the chopped onion, and sauté until translucent.
- Add the leeks, celery, and potatoes; sauté for 5 minutes.
- Pour the vegetable broth into the pot and bring to a boil.
- Reduce heat, cover, and simmer for 30 minutes.
- Blend the soup until smooth.
- Season with salt and pepper to taste.
- Serve hot and enjoy.
