Description

Ingredients

  • 1 cup flour
  • 1 1/2 cups plant-based milk (almond or soy)
  • Pinch of salt
  • 2 tbsp olive oil
  • 1 can chickpeas, drained and rinsed
  • 2 cups spinach
  • 2 cups mushrooms, sliced
  • Vegan cream for garnish

Instructions

  1. In a bowl, mix flour, plant-based milk, and salt until smooth.
  2. In a pan, heat olive oil; add chickpeas and spinach, cooking until tender.
  3. Add mushrooms and sauté until golden brown.
  4. Season with salt and pepper to taste.
  5. In a separate pan, cook crepes over medium heat until golden on both sides.
  6. Spread vegetable mixture on each crepe, add vegan cream, and roll gently.
  7. Serve warm and enjoy!

Notes

Refrigerate for 3-4 days or freeze for up to 2 months. Reheat gently before serving.
