Ingredients

- 1 cup flour
- 1 1/2 cups plant-based milk (almond or soy)
- Pinch of salt
- 2 tbsp olive oil
- 1 can chickpeas, drained and rinsed
- 2 cups spinach
- 2 cups mushrooms, sliced
- Vegan cream for garnish
Instructions
- In a bowl, mix flour, plant-based milk, and salt until smooth.
- In a pan, heat olive oil; add chickpeas and spinach, cooking until tender.
- Add mushrooms and sauté until golden brown.
- Season with salt and pepper to taste.
- In a separate pan, cook crepes over medium heat until golden on both sides.
- Spread vegetable mixture on each crepe, add vegan cream, and roll gently.
- Serve warm and enjoy!
Notes
Refrigerate for 3-4 days or freeze for up to 2 months. Reheat gently before serving.
