A cozy and comforting one-pot meal made with chicken mince, carrots, potatoes, and flavorful herbs, perfect for lazy cooking days.

- 500g de haché de poulet
- 2 carottes, diced
- 1 oignon, chopped
- 3 pommes de terre, diced
- 400ml de bouillon de légumes
- 2 cuillères à soupe d’huile d’olive
- 1 cuillère à café d’herbes de Provence
- Sel et poivre, to taste
Instructions
- Peel and dice the carrots and potatoes into small cubes (about 1 cm).
- Finely chop the onion.
- In a large cocotte, heat 2 tablespoons of olive oil over medium heat.
- Add the chopped onion and sauté for 3-4 minutes until translucent.
- Incorporate the carrots and cook for another 5 minutes.
- Add the minced chicken to the pot and cook for about 8-10 minutes until golden brown.
- Stir regularly to prevent sticking.
- Add the diced potatoes and herbes de Provence, mixing well.
- Pour the vegetable broth into the pot to cover all the ingredients.
- Bring to a boil, then reduce the heat and let simmer, covered, for about 30 minutes.
- Check seasoning with salt and pepper as needed.
- Serve hot in deep plates, garnished with fresh herbs if desired.
Notes
Feel free to customize with different vegetables or minced meat. This dish is also freezer-friendly.
