Description

A cozy and comforting one-pot meal made with chicken mince, carrots, potatoes, and flavorful herbs, perfect for lazy cooking days.


Ingredients

  • 500g de haché de poulet
  • 2 carottes, diced
  • 1 oignon, chopped
  • 3 pommes de terre, diced
  • 400ml de bouillon de légumes
  • 2 cuillères à soupe d’huile d’olive
  • 1 cuillère à café d’herbes de Provence
  • Sel et poivre, to taste

Instructions

  1. Peel and dice the carrots and potatoes into small cubes (about 1 cm).
  2. Finely chop the onion.
  3. In a large cocotte, heat 2 tablespoons of olive oil over medium heat.
  4. Add the chopped onion and sauté for 3-4 minutes until translucent.
  5. Incorporate the carrots and cook for another 5 minutes.
  6. Add the minced chicken to the pot and cook for about 8-10 minutes until golden brown.
  7. Stir regularly to prevent sticking.
  8. Add the diced potatoes and herbes de Provence, mixing well.
  9. Pour the vegetable broth into the pot to cover all the ingredients.
  10. Bring to a boil, then reduce the heat and let simmer, covered, for about 30 minutes.
  11. Check seasoning with salt and pepper as needed.
  12. Serve hot in deep plates, garnished with fresh herbs if desired.

Notes

Feel free to customize with different vegetables or minced meat. This dish is also freezer-friendly.
