Ingredients

Scale
  • 4 medium russet potatoes
  • Salt, to taste
  • Black pepper, to taste
  • 1 tsp oregano
  • Cubes of cheese (cheddar, mozzarella, or your choice)
  • 2 large eggs
  • Oil, for frying

Instructions

  1. Boil the potatoes in salted water until tender.
  2. Drain and mash the cooked potatoes with salt, black pepper, and oregano.
  3. Create a pocket in the mashed potato mixture and fill with cheese cubes; mold potato mixture around the cheese.
  4. Beat eggs in a bowl, season with salt and pepper, and dip each stuffed potato into the egg mixture.
  5. Chill the stuffed potatoes in the refrigerator for at least 30 minutes.
  6. Heat oil in a frying pan over medium heat and fry the stuffed potatoes until golden brown and crispy on all sides.
  7. Drain on paper towels before serving.
