Ingredients

- 4 medium russet potatoes
- Salt, to taste
- Black pepper, to taste
- 1 tsp oregano
- Cubes of cheese (cheddar, mozzarella, or your choice)
- 2 large eggs
- Oil, for frying
Instructions
- Boil the potatoes in salted water until tender.
- Drain and mash the cooked potatoes with salt, black pepper, and oregano.
- Create a pocket in the mashed potato mixture and fill with cheese cubes; mold potato mixture around the cheese.
- Beat eggs in a bowl, season with salt and pepper, and dip each stuffed potato into the egg mixture.
- Chill the stuffed potatoes in the refrigerator for at least 30 minutes.
- Heat oil in a frying pan over medium heat and fry the stuffed potatoes until golden brown and crispy on all sides.
- Drain on paper towels before serving.
