Instructions

  1. Prepare strong coffee and let it cool.
  2. In a bowl, whisk egg yolks with sugar until the mixture whitens.
  3. Incorporate mascarpone into the egg yolk mixture.
  4. Beat egg whites until stiff and gently fold into the mixture.
  5. Quickly dip the ladyfingers into coffee and place them at the bottom of a mold.
  6. Spread half of the mascarpone mixture over the biscuits.
  7. Repeat the process with another layer of biscuits and the remaining cream.
  8. Chill in the refrigerator for at least 240 minutes.
  9. Before serving, dust with cocoa powder.
