- 2 Sweet potatoes, diced
- 1 Broccoli, cut into florets
- 1 cup Brussels sprouts, halved
- 1 can Chickpeas, drained
- 3 tbsp Tahini
- 2 tbsp Olive oil
- Salt, to taste
- Spices, to taste (optional)
Instructions
- Preheat the oven to 200°C (390°F). Toss sweet potatoes, broccoli, and Brussels sprouts with olive oil and salt. Roast until tender and slightly charred.
- In a pan over medium heat, toss drained chickpeas with some oil, salt, and spices. Cook until crispy.
- In a bowl, combine tahini with water, lemon juice, and salt. Adjust thickness as needed.
- Assemble the bowl with roasted veggies, crispy chickpeas, and drizzle with tahini sauce.
- Serve warm or allow to chill for a refreshing dish.
Notes
