- 12 oz pasta of your choice (spaghetti, penne, or fusilli)
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon red pepper flakes (adjust to taste)
- 1 cup cherry tomatoes, halved
- 1/2 cup fresh basil leaves, roughly chopped
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- In a large pot of salted boiling water, add your pasta and cook according to package instructions until al dente. Drain and set aside, reserving about 1 cup of pasta water.
- In a large skillet over medium heat, add olive oil. Once hot, add the minced garlic and red pepper flakes. Sauté for about 1-2 minutes until fragrant, being careful not to burn the garlic.
- Toss in the halved cherry tomatoes and cook for 3-5 minutes until they begin to soften and burst.
- Add the cooked pasta to the skillet, tossing to combine. If it seems dry, add a little reserved pasta water until you reach your desired consistency.
- Stir in the fresh basil and grated Parmesan cheese. Season with salt and pepper to taste.
- Enjoy your pasta warm, garnished with extra Parmesan and basil if desired.
